Sauteed Broccoli with Mushrooms

We try to eat well — or, at least my son Will and I do. I'm working on knocking off baby weight and he is a baby, so it's kind of a priority.

This dish helps us do that. Lightly sauteed broccoli joins meaty, flavorful sauteed mushrooms for a delightful dish. I enjoyed it with some glazed beets as well.

This week, I created a sauteed veggie dish that pairs wonderfully with rice.

Who says vegetarian cooking can't be high flavor and super tasty?

Sauteed Broccoli with Mushrooms
Yield: 4 servings

Sauteed Broccoli with Mushrooms

Ingredients

  • 2 teaspoon olive oil
  • 3 garlic cloves, , minced
  • 1 tablespoon lime juice
  • 1.5 cups baby bella mushrooms, , chopped
  • 4 cups broccoli, , washed and chopped
  • 1 teaspoon dried rosemary
  • ½ teaspoon dried savory

Instructions

  1. In a large skillet, heat the olive oil over medium heat and add garlic. Sauté for one minute and then add the lime juice and chopped baby bellas. Continue sautéing for an additional three minutes, stirring frequently.
  2. Stir in broccoli, rosemary and savory and cover. Cook for 3-5 minutes, until broccoli is just tender.

  2. Kim, I am glad you liked it! I am actually planning on making the beets again on Sunday along with a yummy bruschetta that uses the beet greens. And the broccoli is going to be a mainstay - it's similar to the one that SparkPeople has a recipe for, but I added just a bit more flavor.
