They are seasonal -- like ramps, they have a very short season and it happens to be right now . . . I saw them in the supermarket yesterday -- not sure if they might  have then at the Greenmarket at Union Square? Or Whole Foods?</description>

		<description>I recently finished reading Stephen King&#039;s &quot;The Girl Who Loved Tom Gordon&quot; which is about a 9 year old Red Sox fan who gets lost in the Appalachian forest. She is sustained by berries and ... fiddleheads ... in fact, discovers an island of fiddleheads that keeps her going for miles. As I was reading, I kept wondering what fiddleheads tasted like and how one might actually cook them. Thanks for this recipe. I&#039;ll keep an eye out for them at the market -- I wonder, are they seasonal?</description>

The fiddlehead greens are a little on the bitter side, but are really complemented with vinegrette.&lt;br/&gt;&lt;br/&gt;When I was describing it to my husband (the taste of fiddleheads) I described it as a mix of peas, asparagus and green beans.  Very unique, for sure.</description>
