The flavor is a good mix of tangy, bitter and sweet. The fiddlehead greens are a little on the bitter side, but are really complemented with vinegrette.

When I was describing it to my husband (the taste of fiddleheads) I described it as a mix of peas, asparagus and green beans. Very unique, for sure.
