Mozzarella-Basil Beef Roll-Up Recipe

I revisited an old style of cooking for me last night, putting a new spin on it. If you’ve been reading my blog for awhile then you may remember my beef roll-ups. I make them in a wide variety with all sorts of contents. Last night, I decided that fresh mozzarella and basil were the fillings du jour and it came out wonderfully.

Mozzarella-Basil Beef Roll-up
Serves 2

2 thin slices of beef (about 4×8 inches, 1/4 inch thick)
4 oz sliced fresh mozzarella (sliced thin)
2 tbsp Parmesan cheese
6 leaves fresh basil
salt
pepper
garlic powder
paprika

Preheat oven to 350.

On a baking sheet, lay two beef slices out flat. Sprinkle lightly with salt, pepper, garlic powder, and paprika. Rub spices in gently to set them.

Divide cheese in two, and spread evenly on the beef. Top with hand shredded basil.

Roll the beef and toppings carefully from one end to the other, securing with two toothpicks or cooking string.

Bake in preheated oven for 12-15 minutes, until cooked through.
