• Recipe: Vanilla Frosting

    Vanilla Frosting
    adapted from Betty Crocker’s Cookbook
    yields about 1 3/4 cups
    3 cups confectioner’s sugar
    1/3 cup butter, softened
    1 1/2 tsp vanilla
    2 tbsp skim milk 

    Combine the confectioner’s sugar, butter and vanilla in the bowl of an electric mixer (or other medium sized bowl). Blend on low for 2-3 minutes.

    Turn mixer onto medium speed and slowly blend in milk. Continue blending until frosting is smooth (you may need to scrape down the sides of the bowl).

    Use to frost cupcakes or a two layer cake.
