I had two objectives tonight: healthy and light. I had taken out some tilapia this morning to have for dinner and had a red onion earmarked for the meal. I wasn’t quite sure what to do with it all though.
Hunting through my kitchen and fridge, I located some organic carrots, a home grown tomato, some white zinfandel and viola! I had a meal. Toss in some rosemary, fresh pepper and salt and it’s golden.
This is very light and the vegetables are still pretty crisp – something I like. If you prefer your veggies softer, blanch them before putting them in the casserole. Also, you may want to salt and pepper the veggies before topping them with fish. But that is completely up to you.
Without further adieu….
Poached Tilapia and Vegetables
serves 2
2 carrots, peeled and chopped into one inch chunks
1 medium red onion, cut into wedges
1 medium tomato, cut into large chunks
1/2 lb tilapia fillets
1/2 cup white zinfandel wine
sea salt
fresh cracked pepper
rosemary
Preheat oven to 375 degrees.
In a large casserole dish, layer carrots, onion, tomato and tilapia. Pour wine over and sprinkle with salt, pepper and rosemary.
Cover and place in preheated oven. Cook for 20-30 minutes, until fish is cooked through.
Serve with rice or rice noodles.

This is the apple pie I made…but more on that later.

So when I was trying to decide what to make first in honor of FitFare’s Fall Feast-ival, two thoughts came to mind: pumpkin and apples. These are the two fall produce items that I most associate with fall. Now I L-O-V-E pumpkin, but I haven’t worked much with apples. That, to me, sounded like a challenge so I got to work.
I went through dozens of recipes before I found one that looked good. It was Apple Cake in Better Food For Kids. I tweaked it a bit to fit my desires and the result was awesome. My husband was blown away by the moist and flavorful apple-y cake. And it was really easy too, which is always a great bonus.
Apple Cake
yields 16 slices
1 cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
3/4 tsp ground nutmeg
1/2 tsp salt
1/4 cup butter, softened
1 cup granulated sugar
1 egg
1/2 tbsp vanilla extract
2 cups sliced and peeled apples
Preheat oven to 400 degrees and grease an 8″ round cake pan.
Stir together flour, baking soda, ground cinnamon, ground nutmeg and salt. Set aside.
In the bowl of your electric mixer, beat butter and sugar until well combined. Add egg and continue to beat. Slowly mix in dry ingredient mix, followed by vanilla. Finally, stir in apple slices.
Pour into greased cake pan and level gently. Place in the oven and cook for 20-30 minutes, until toothpick inserted in center comes out clean.
Remove cake from pan and cool on a rack
TO SERVE: drizzle with caramel or top with a scoop of vanilla ice cream.
