		<description>I got introduced to these sweet mini-peppers from my neice.  We poach them for about 10 minutes to take away some of the crispness.  We slice them in half to create a &quot;boat&quot; and then stuff with artichoke spinach dip (from the deli) or any number of dips.  You can serve cold or I place under the broiler in my toaster oven until the filling bubbles.</description>

Just a quick question though, what is the benefit of using dry sun-dried tomatoes over the kind packed in olive oil? I used the type packed in olive oil (because I already had them) and it seemed to worked perfectly.</description>

		<description>Thank you for sharing. I was giving tons of these peppers over the weekend and had know idea what to do with them. I too have been looking online for a recipe and until yours only found rice stuffed minis. The feta sounds great and bonus that its a protein instead of a starch.</description>
