Weird! I made the exact same thing this morning! After hearing about it on the Oprah show, I couldn't get it out of my head. I've been eating Kix and milk for breakfast (which have been very good to me), but those two things are not budget friendly, so I've been trying to come up with cheap healthy options. I think this one's a keeper!

Cate, you are so right on that.

Grant, I totally agree -- presentation and variation really keep things interesting for everyone.

Bill, that is a cinnamon stick (just garnish ;) ). As for cooking in the microwave, just substitute the apple juice for water and that should do the trick -- cook as normal.

Love CoCo's oatmeal - apples, raisins, brown sugar on the side. Always putting something on my oatmeal but never thought of apples. Will try it - usually nuke the OM - may have to do the apples prior.

It's so important to offer children variations to keep things interesting for them. A lot of kids don't eat veggies because of the way they are presented. Thanks!

Swapouts like that make a big difference, don't they? Sometimes when making rice, depending on what else it's being served with, I switch the water for chicken broth ... completely different end result.
