Eat. Live. Be. – My Go-To Lunch

Happy Monday! Today is Eat. Live. Be. day and since I am swamped with work this week, I am going to keep it short and sweet. This week’s topic is our go-to lunches. I love this topic, because I am pretty devoted to a delicious sandwich that I eat regularly.


Yes, that’s a turkey sandwich on 7-grain bread. I eat this several times a week, when I’m busy. Not normally with chips (this picture is from last year … I swear!). It’s super fast, the kids love ’em too and it tastes good. This is my favorite version, featuring avocado. It’s also tasty as a California Turkey Club Wrap, with bacon.

But even if this isn’t my lunch, I try to keep lunch filling and flavorful, without being too heavy. Heavy food makes you tired, and this busy gal doesn’t have time for tired. Seriously. So, salads like Lime Black Bean Salad with Shrimp, are also favorites too.

    I’m jealous! Your lunch looks delicious. Most days I don’t even have time for a simple sandwich. For me, it’s usually a protein bar! But, over the weekends and on days I work from home I get to have YUMMY leftovers. Thanks for sharing your strategies. Keep it up!

    I used to eat a turkey sandwich every day! All throughout college and my childhood…it’s definitely a fabulous go-to! And super good for you…especially with some avocado thrown in. Yum!

    sandwiches are so easy when it comes to a grab and go lunch. Yours is similar to what I tend to pack for myself… when I remember to do it!

    I love, love, love avocodoes! They are so yummy and good for you!

    When it comes to lunches, anything easy and delicious is what I am all about. If my husband, kiddo and I like it, then I am all for it.
