Since this was working from my grandmother’s recipe, I went with her spelling of the dish, though you are right that it is correctly spelled Chicken Cordon Bleu. I should have noted that in the recipe/post — but have now. The cordon bleu translates to “blue ribbon,” meaning it’s a winning dish. Quite a fun name for a tasty dinner, right?
