Yum, this sounds good! Leftovers are no problem at our house. Lots of them get eaten for breakfast or taken to lunch. It makes my life easy!

I am a huge leftover lover but I can definitely see the appeal in recreating a whole new meal out of them! These tacos sound delicious…total happy food and the perfect use for that chicken!

Perfect! Thanks. We adore Tex Mex anything, and we always have leftover chicken. I just made chicken/cheese quesadillas to use some up yesterday. Wish I’d had this recipe at the time instead.
