A New Gig and Black Bean Avocado Salad with Corn and Red Peppers

Lunch doesn’t have to be complicated — or take long to create. This colorful salad is filled with nutritious ingredients but only takes a few minutes to whip up (sweet!). It’s fresh today on Less Than Perfect Parents (my newest gig! I’ll be contributing deliciously healthy recipes once a month) — my Black Bean Avocado Salad with Corn and Red Peppers.
