Serving a selection of olives is kind of a thing when it comes to any holiday entertaining that I do. Typically, I hit the olive bar at my favorite grocer for a several delicious varieties. I never thought to do any differently — until this fall when I whipped up an unforgettable batch of Lemon Garlic Herb Marinated Olives with Feta. Suddenly it dawned on me: why am I paying all this money for fancy olives when I can make fancy olives at home?

It was kind of like a bell going off in my head — those marinated olives that I love can be totally made at home easily and inexpensively.

When Price Chopper, one of the grocery stores of my childhood, asked me to whip up a holiday recipe, olives popped right into my head. Lindsay Naturals Green Olives were a bargain at just $1.50 per can (on sale!), so I used them to create a herb-infused, spiced roasted olive recipe that is perfect for holiday entertaining.

What makes these extra special is the roasting. Roasting gives the olives a little extra richness, and also allows the basil, thyme and spicy pepper flavors really come together. Also, you should know that these are definitely on the spicy side — if you don’t want them to be quite so spicy, reduce the amount of crushed red pepper to 1/8 teaspoon.

Be sure to serve these with cute picks so guests can grab, stab and go. These are also a great compliment to creamy cheeses — which are totally another holiday entertaining staple.

Roasted Spicy Herbed Green Olives (Easy Holiday Recipes)

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 1 6- oz can Lindsay Naturals California Green Ripe Olives, pitted
  • 1/2 tsp dried basil
  • 1/4 tsp crushed red pepper
  • 1/4 tsp freshly ground black pepper
  • A few sprigs fresh thyme
  • 1 tbsp extra virgin olive oil
  • 1 tsp red wine vinegar

Instructions

  1. Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil.
  2. Drain the olives and spread out on the baking sheet. Sprinkle with dried basil, crushed red pepper and black pepper. Arrange the thyme springs around the sheet. Drizzle with olive oil and red wine vinegar and shake the tray lightly to mix.
  3. Bake for 10 minutes.
  4. Serve hot from the oven, or chilled.
