This recipe was created for my client, Jones Dairy Farm, but all opinions are my own.

As evening fell on our house Friday, I was pulling a fragrant loaf of this bread from the oven. Sweet and scented with cinnamon, it filled the house with the aroma of baking and family and homemade goodness. It’s a lot like I imagine homes smelled like  100 years ago when most baked goods were made at home.

But this bread is a step beyond ordinary. It’s not just a cinnamon bread with a crumbly streusel topping. It’s also dotted with bacon — both inside and on top of the bread.

“Bacon! Bacon! Bacon!” Paige said softly as ate a warm slice spread with soft Irish butter for breakfast this weekend. It really does make this loaf special.

The idea for this came from the simple combination of two favorites: a moist, fragrant loaf of quick bread and my favorite bacon.

This is made with Jones Cherry Hardwood Smoked Bacon, a product crafted by Jones Dairy Farms. As you may remember, I am a blog ambassador for Jones Dairy Farm and have been creating delicious, family-friendly recipes for them since October. Because of that, I have spent a lot of time with the Jones products and even went on a crazy fun and interesting trip with them to the Culinary Institute of America a few weeks ago.

That trip made me fall in love with the company even more than I already was. Why? Because the company is so passionate and devoted to making good, wholesome, quality products — without short-cuts. It’s a beautiful thing.

The Jones Cherry Hardwood Smoked Bacon is — hands down — my favorite pork bacon ever. The flavor is so rich, and almost a little sweet.

Making this bread is a simple process. I mixed together sour cream, oil and an egg to start the dough. My stand mixer — a prized possession that I use more often than I ever imagined I would — hummed as it swirled the ingredients together. Then the dry ingredients were sifted together and added to the mixer too. The dough for this bread is stiff but pliable. And spread into a greased loaf pan, it’s ready for the salty-sweet streusel topping that takes the bread from good to extraordinary.

Ingredients

  • 1 8- oz. container sour cream
  • 1/4 cup canola oil
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 slices Jones Cherry Hardwood Smoked Bacon, cooked and chopped

Streusel Topping:

  • 2 tablespoons all-purpose flour
  • 2 tablespoons light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup cold unsalted butter
  • 2 slices Jones Cherry Hardwood Smoked Bacon, cooked and chopped

Instructions

  1. Preheat oven to 350 degrees. Grease a loaf pan.
  2. In the bowl of a stand mixer, combine the sour cream, oil and egg. Using the wire whisk attachment, mix on medium speed until fully combined. Be sure to scrape down the sides of the bowl, as needed.
  3. In a large bowl, sift together the flour, sugar, cinnamon, baking powder, and salt. With the stand mixer running on its lowest speed, add a little of the flour mixture at a time to the sour cream mixture until fully incorporated, scraping down the sides of the bowl as needed. Add the bacon and mix briefly to combine.
  4. Pour the batter into a buttered loaf pan and spread into one even layer.
  5. In a small bowl, start the streusel topping by sifting together the flour, light brown sugar and cinnamon. Using two knives or a pastry cutter, cut the butter into the mixture until a coarse mixture forms. Stir in the bacon. Spread the topping over the bread batter.
  6. Slide the loaf pan into the oven and bake for 60-70 minutes, until a knife inserted in the center comes out cleanly.
  7. Let cool before slicing and serving.
