Since 2014, I’ve written a weekly newspaper column about food and life for the Bangor Daily News. It’s called Maine Course (aptly named by my brother), and appears online every Tuesday.
This week’s column features a recipe for Dill Quick Pickles, which are perfect for the cucumbers that are just coming into season at farmers market (and the dill and garlic too!). The secret to these pickles is in how they are prepared — by slicing them just-so, they pickle quickly (though the flavor deepens as it sits).
