Homemade Cranberry Almond Granola
Serves: yields 4 cups

  • 2 cups old-fashioned rolled oats
  • ½ cup sweetened shredded coconut
  • ½ cup sliced almonds
  • 2 tbsp olive oil
  • 2 tbsp honey
  • ¼ tsp cinnamon
  • 1 cup dried cranberries
  1. Preheat oven to 350 degrees. Line a rimmed baking sheet with aluminum foil.
  2. Add the rolled oats, coconut and almonds to the rimmed baking sheet and toss to combine.
  3. In a small bowl, stir together the olive oil, honey and cinnamon. Drizzle over the oats mixture and stir to combine.
  4. Bake for 15-20 minutes, stirring once or twice, until golden brown. Remove from the oven and toss with the cranberries.
  5. Store in an airtight container for up to 1 month.
