Avocado Toast

Avocados aren’t safe in my house. Nope, not one bit. Avocados are the kind of food that gets gobbled up and fought over. We just adore them. Between my two avocado-loving kids and myself, we can go through many, many avocados. Especially when they are about $1 each at the store, like they are right now.

Typically, we eat avocado one of a few ways: mashed on toast with salt and pepper and a fried egg on top (my favorite!), whipped into guacamole or sliced and diced into salads and sandwiches. But then again, we are pretty open with our avocado love – we tossed a diced one with pasta and roasted veggies last week and it was divine. And over right? We love ‘em like that too.

What we all love is the smooth, creamy texture and the earthy flavor of avocado – especially when it’s enhanced with a good sprinkling of salt. Mmm.
