This recipe was created for my client, Green Giant, but all opinions are my own.

When soccer began last week, I wasn’t quite ready for an evening on the field. Though I’d packed all the kids gear (well, except the soccer balls … fortunately the coaches had extras), I hadn’t thought for a second that my work attire would be inappropriate for the field — until I was standing there, trying not to sink into the ground in my high heels whilst watching both kids play. I’d forgotten a chair, blanket, appropriate clothes and footwear — just about everything for me. I might as well have had a neon sign on my head that said “Nope, didn’t plan well today.”

But sometimes that happens — sometimes you forget yourself while caring for others. Sometimes you focus so hard on certain details that you miss the bigger picture. And on some days, it’s dinner that falls by the wayside. That’s when it helps most to have some super quick and easy recipes ready to go — like this Very Veggie Tortellini that can be whipped up in just 15 minutes.

Toss-together pasta like this are a life-saver (or, more accurately, a dinner-saver) for those nights.

Making Very Veggie Tortellini

You start with a few simple ingredients. In this case, it’s dried tortellini pasta, frozen veggies, tomatoes and cheese. Then you cook the veggies and the pasta and mix it all up. In no time, you are sitting down to dinner — as if you totally planned it that way (wait, didn’t you?).

That leaves time for the things that really matter — the conversations about your days, the checking in on what’s going on and planning for what’s to come later in the week.

Very Veggie Tortellini

Yield: 4 servings
Prep Time: 2 minutes
Total Time: 2 minutes


  • 8 oz. cheese tortellini
  • 1 pouch Green Giant Market Blend Veggies
  • 1 medium tomato, , diced (about 1 cup)
  • 1/2 cup freshly grated romano cheese
  • Salt and pepper, , to taste


  1. Bring a pot of water to a boil and cook the tortellini to package directions. Drain well.
  2. While the tortellini is cooking, cook the Green Giant Market Blend Veggies, per package directions.
  3. In a large bowl, stir together the tortellini, veggies, tomatoes and cheese. Season with salt and pepper, as desired.
  4. Serve immediately.

Been there. Soooo been there; which is why I always carry a pair of sneakers in my bag. The feeling of sinking into grass and hoping your heels don't come off is one I don't care to repeat.

Anyway, you can't beat this easy meal. Put together in 15 minutes and cheese tortellini? YUM.

I love recipes like this. Sometimes you just want quick and easy. Most nights when you have kids quite frankly. I love that this one has a healthy spin with the veggies. Perfect for any weeknight dinner.
