In less than a month, my kids are headed back to school. If you are a mom, yours probably are too (heck, some of my friends have kids heading back this week!). And you know what that means … evenings get even busier. Even if you have kids in camp, school adds another dimension to evenings — there’s homework, studying, activities and — wait — what’s for dinner? That’s why I am already thinking of recipes that will make busy back to school nights a little easier.
Step 1: Grab the slow cooker. Seriously, the slow cooker is a busy night life saver. Step 2: Mix it up. You just toss ingredients in, set it to cook and at the end of the day you have a perfect meal ready to go. No stress required. Step 3: Come home and eat.

When it comes to Indian food, one of my very favorite dishes is Chicken Tikka Masala. If Whole Foods has it in their hot foods section, you can bet I will take a little tray of it. Crock Pot BBQ Chicken & Pineapple Quesadillas

Like Erin from The Law Student’s Wife, I am a total sucker for Thai food. And though my kids aren’t always a fan of spicy things, coconut based Thai curries are something we can all enjoy together — the creamy coconut milk offsets the spice. Plus, I love that this is a step outside the ordinary — Thai in a slow cooker? Love!
