Sending kids back to school, there’s always talk of the germs, colds and ailments that seem to spread like wildfire in classrooms. But honestly, the time when I think germs run rampant is when late fall sets in. That’s when the heavy coughs come home. That’s when the flus begin to set in. And that’s when I start to think about how to keep my kids and myself healthy for winter.
Hint: Take your vitamins. Every day.
All year long, it’s important to eat a healthy diet filled with lots of fruits and veggies. In the summer, when the farmers markets are brimming with tomatoes, cucumbers, peppers, greens and more, it always seems a little easier. There’s something entrancing and inviting about that warm-from-the-sun, just picked produce. But when the weather turns cold, and farmers markets aren’t as plentiful, it’s more of an effort. We have to plan for those veggies, and often choose from the shelves at the grocery store.
Still, it’s important. So we make an effort.
Salads with dinner. Veggies with lunch. Fruit for snacks. Smoothies and fruit-based drinks for breakfast. These are the things that ensure we keep getting all our vitamins and nutrients throughout the day — even in the darkest days of winter.
I first made this particular drink, my Easy Creamy Watermelon Drink, as a happy accident. We’d run out of frozen fruit, but I had a watermelon in the fridge. So I cubed the watermelon and tossed it in the blender with vanilla yogurt and coconut water, thinking it would fill the need. I wasn’t expecting my kids to love it. But they did. They so did.
It takes mere minutes to whip this up in a blender. And perhaps another minute or two to cut the watermelon and measure the yogurt and coconut water. But all told, it’s less than five minutes for this refreshing, easy, nutritious drink to accompany breakfast.
Eating well matters. Always.
As a busy single mother, it’s important to me that I keep myself healthy during the winter months too. My kids need me. My employees need me. And I also need me to be healthy as well. I follow my own advice above — eating my fruits and veggies, eating well, and taking vitamins regularly. And I especially love vitamins that are tasty and fun. Easy Creamy Watermelon Drink
- 4 cups cubed watermelon
- 1 6- oz container vanilla yogurt
- coconut water
- Combine all ingredients in a blender.
- Blend to smooth.
