Do you like pasta? Because I do. So much. And in January, my newest cookbook all about pasta comes out. It’s called One-Pot Pasta: 65 Super Easy Recipes for One-and-Done Meals.
The One-Pot Pasta Cookbook, which is my second book with Rockridge Press, features 50 recipes for one-and-done pasta meals, plus 15 recipes for side dishes to accompany them. These are flavorful pasta dishes in a variety of combinations that are so easy to make. I had so much fun working on the cookbook, experimenting with different flavor combinations and creating the recipes that ultimately got included.
But, for me, there were two things I really loved most. First, these really are the easiest of easy recipes. For about half the recipes, you toss the ingredients in the pot, stir and cook. Sometimes there’s an extra ingredient or two to finish it off, but it’s all so simple. Perfect for the busiest nights. The other half of the recipes do require a couple more steps (such as sauteing chicken and then removing it from the pan before cooking the remainder of the ingredients and then stirring it back in). This ensures that in those recipes that need it, everything gets cooked to the optimum doneness.
The second thing I really loved though was that this is a waste-free method of cooking. All the ingredients that go into the pot become part of the pasta. There’s no draining, no excess ingredients, nothing but tender, flavorful dinners, ready to serve. You aren’t tossing water down the drain, because any water used is part of the finished dish.
What Are Some of the Recipes?
One-Pot Pasta contains recipes for cheesy pastas, vegetarian and vegan pastas, meat pastas and seafood pastas. They are divided into sections and all have the prep and cooking times, as well as helpful tips to make cooking a breeze.
