Easy French Toast for Two

Grab a loaf of Italian bread and make this easy recipe for French toast for two. It’s a breakfast favorite.

As I was preparing for a presentation about my food writing career recently, I started thinking about all the things I’ve done in nearly 19 years. When I began, I was in my mid-20s, had an infant son and wasn’t sure where this career would go. Would I be the next big restaurant reviewer? Or perhaps use my journalism background to report on big food?

I used Sarah’s Cucina Bella as a testing ground for writing. I wrote about food media (oh, Gourmet!), recapped food competition shows, attended events (seeing Judith Jones speak was a highlight!), interviewed chefs (Guy Fieri was just like he was on TV!) and authors and so much more. But I kept coming back to the food itself — and the preparation of food.

Eventually, I realized my niche was in quick and easy cooking from scratch. And though I sometimes use convenience items (premade pie crust and puff pastry, for instance) to make cooking easier, that’s basically what I have focused on for nearly two decades.

All of this brings me to this recipe for French toast for two. It’s quick and easy. It’s simple. And it’s delightful. You can make this on a lazy Sunday morning and enjoy it on the porch with your special someone. Or you can get up just a wee bit earlier and make it for your kids on their first day of school. Either works.

It starts with six slices of Italian bread, each about 1-inch thick. My grocery store sells half loafs that are perfect for this. But a full loaf will work too.

Next, you make the egg mixture with eggs, milk, vanilla extract, brown sugar and cinnamon. This gives the French toast a lovely, rich flavor. Whisk that all together.

Finally, you dredge the bread in the mixture, giving it a bit to soak in, and then cook it on a buttered griddle. Serve it with a sprinkle of confectioners sugar and some maple syrup, if you are so inclined. Delightful.

Of course, you can also just make this French toast for yourself as well. Leftovers should be stored in an airtight container in the fridge. Reheat them in the toaster.

Ingredients

  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 tablespoon unsalted butter
  • 6 thick slices (1-inch thick) Italian bread
  • Optional: confectioners sugar, maple syrup

Instructions

  1. In a small bowl with a wide bottom, whisk together the eggs, milk, sugar, vanilla extract and cinnamon until well combined.
  2. Melt the butter on a griddle or frying pan set over just below medium heat. When the pan is hot, dredge the bread, one slice at a time, on both sides. Don't be afraid to pause for a few beats when doing this so the egg mixture can soak into the bread a bit. Then place each slice into the pan. Don't crowd the pieces. Cook, flipping once, until browned on both sides. Continue until all the bread has been cooked. Discard any excess egg mixture.
  3. If desired or necessary, set a small baking sheet topped with parchment paper in a 225 degree fahrenheit oven to hold the cooked French toast until ready to serve. This will keep it warm.
  4. Serve the French toast with a dusting of confectioner's sugar and a side of maple syrup, if desired.
