On warm summer days when I was a child, my grandmother would pull the canister of iced tea mix from the cupboard and make pitchers of iced tea to drink with lunch or dinner. It was always there, always ready to use, always served in that cobalt blue pitcher that she’d hunted all over for.

If we were home in New York, I’d open the bottom of the Dutch door in our kitchen (the top was already open), step out onto the rough concrete of our patio in my bare feet and skip out to the garden for some mint leaves.

Mint was the secret ingredient my grandmother liked to add to her lemon iced tea, with its pungent scent and cooling flavor.

That tea would be served with homemade sandwiches or big sandwiches from a favorite deli, burgers hot off our grill and seafood dinners from our kitchen. Whatever we were having, lemon iced tea was there.

Strangely, I don’t remember iced tea making an appearance on the table in the winter. In fact, I don’t think we had a drink equivalent for wintertime at all.

Still, when I think of iced tea, it’s intrinsically tied to those family meals — ones served around our black metal patio set, at the tan Formica kitchen island or around the heavy, dark trestle table in the dining room. It’s tied to the laughter, happiness and joy that flowed so freely then.

While we didn’t drink it in winter back then, these days I know that iced tea is good any time of year when family and friends gather around the table. These days though I favor particular homemade iced tea that starts with freshly brewed tea.

Honey Lemon Iced Tea is the ideal iced tea for winter. It takes my favorite tea flavors — honey and lemon tea — and transforms them into refreshing iced tea. The honey not only adds sweetness to it, but it also gives this Honey Lemon Iced Tea a warmth. And lemon adds a nice citrus flavor to it. Altogether, this iced tea — lightly sweetened and bright with flavor — sparks feelings of comfort, calmness and even a bit of joy.

It’s good. So good.

We enjoy Honey Lemon Iced Tea with meals — pasta, sandwiches, whatever — and snacks too — like the cheese, crackers and olives pictured here. It’s good for those times when we want to play board games or card games until we’re sleepy. Or when I set out snacks and we read or watch TV. Maybe someday these will be the happy times that a sip of iced tea recalls for them.

Honey Lemon Iced Tea

Yield: 8 servings

Ingredients

  • 2 Family Size Lipton Iced Tea Bags
  • 4 cups boiling water
  • 6 cups cold water or ice and water
  • 1/2 cup honey
  • 1 jumbo lemon, , thinly sliced

Instructions

  1. Place the two tea bags in a heat-safe pitcher. Pour the boiling water over and seep for 3-5 minutes. Remove the tea bags and squeeze to drain liquid.
  2. Stir in the honey, and then add the water and lemon slices. Stir again.
  3. Chill until ready to serve.

I don't remember ice tea in the winter either. But definitely a pitcher in the summer.
