Last night, as my kids and I sat around our dinner table, something struck me: their summer vacation is nearly over. But I am already thinking of quick, easy dinners that can also double as leftovers for school lunches. My kids love to pack leftovers for lunch a few times a week, so I love dishes like this Chicken Fajita Quinoa. It’s equally good served hot or cold, and is super easy to make.

Score one for the back-to-school-avoiding mama.

This dish is made with quick cooking quinoa (it’s ready in about 20 minutes!).

Rich in protein and fiber, quinoa is often considered a grain even though it’s really a seed. But regardless, it’s a delicious alternative to rice. In this recipe, it’s mixed with sauteed red onions, red peppers and tomatoes, and then tossed with lime juice and zest, giving it a fresh, citrusy flavor. Mixed with grilled chicken, this is an easy, fast and flavorful meal for dinner.

Chicken Fajita Quinoa

Ingredients

  • 1 cup dry red quinoa
  • 2 cups water
  • 2 tbsp olive oil
  • 1 red pepper, , sliced
  • 1 red onion, , halved and sliced
  • 1 clove garlic, , minced
  • 1 cup fresh diced tomato
  • 1/4 cup fresh chopped cilantro
  • 1 lime, , zested and juiced
  • salt and pepper, , to taste
  • 2 cups Tyson® Grilled and Ready® Chicken Breast Strips

Instructions

  1. In a saucepan set over medium heat, combine the quinoa and water. Bring to a boil, reduce heat to low, cover and simmer for 15-20 minutes until the quinoa is tender and the water is fully absorbed. Remove from heat and transfer the quinoa to a large mixing bowl.
  2. In a large skillet, heat the olive oil over medium heat. Add the red pepper and red onion and saute until crisp tender. Stir in the garlic and cook for an additional minute. Transfer contents of the skillet to the mixing bowl with the quinoa.
  3. Add the tomato, cilantro and lime zest and juice to the mixing bowl. Stir well to combine. Season with salt and pepper, as desired. Toss with chicken. Serve immediately, with or without shredded cheddar cheese, diced avocado and sour cream.
