When Fridays roll around, as the work week comes to an end and the weekend quickly approaches, I usually start mulling our schedule for the weekend. Basketball games, events to attend, who needs to be where and when ... and I come up with an order of things that helps keep me sane even on the busiest of weekends. The goal is to both do everything we need to and to find some time for fun too.
You know how it is. So many families -- both small ones like mine or bigger ones -- lead super busy lives these days. Kids with multiple sports. Work and volunteer responsibilities. Friendships to maintain. They're on the go, living, playing and do so much stuff.
How often do you just stop? Relax? Chill?
For me, it's not that often. But those moments of so-called "me time" are so important, so I grab them whenever I can -- whether it's a few minutes in the early morning hours or getting lost in a book at bedtime.
But this past weekend? It was different. The kids were away, and I didn't have to be anywhere at any certain time ... So I claimed that time as my own. I caught up on a Netflix show, relaxed and let my brain rest. And I also thought a little more about what I want out of this year -- health and happiness,mostly. Sure, it might be nearly a month into 2016, but it seemed high time for a little goal setting.

I happened to have Real Simple® and PEOPLE StyleWatch® magazines that I picked up my local Shaw's Supermarket to help. Real Simple's February 2016 edition is full of great advice -- from The One Small Change Diet to so many great recipe ideas (including ones for the broiler! Check out the Charred Brussels Sprouts Salad on page 136 if you love 'em as much as I do).
I started making a list of little ideas I want to implement this year.
As for PEOPLE StyleWatch? Well, you can take the girl out of New York ... but you can't take the style-hunger New Yorker out of the girl. While I can't say I'll be rocking a mini dress anytime soon, there are some fabulous fashion finds (check out all the hearts on page 61!) perfect for upping your wardrobe game.

Now, how about a tasty breakfast to enjoy whilst flipping through the pages?
This recipe is so easy, and it's one of my favorites. English muffins (I used honey wheat, but whatever variety you love will do) are topped with smashed avocado, fresh spinach and an egg over easy for creamy, warm, delicious -- but messy -- breakfast English muffin sandwiches. They're super quick to make, and so tasty too.

Avocado Spinach Egg English Muffin Sandwiches
These saucy sandwiches are packed with tasty ingredients. But they can be a little messy -- for a less messy version, break the yolk while cooking. Of course, it won't taste quite as good that way though.
Ingredients
- 2 English muffins, split open
- 1 avocado, pitted, peeled and smashed with a fork
- salt and pepper, to taste
- ¼ cup baby spinach
- 2 large eggs
Instructions
- Toast the English muffins.
- Meanwhile, season the smashed avocado with salt and pepper, to taste. Divide evenly among the four halves of toasted English muffins. Divide the baby spinach onto the two bottoms of the English muffins.
- In a small frying pan, make over each eggs. Preheat the pan to just shy of medium heat and cook each of the eggs until the white is set, flipping once. Place one on top of each of the spinach topped English muffins. Top with the other half of the English muffin.
- Enjoy!

I put just about anything and everything on english muffins. I love them! And you had me with that runny egg yolk. It makes anything else underneath it creamy, dreamy and delicious!
