Perfectly cooked, tender salmon is drizzled with a salty-tart-buttery lemon caper sauce in this decadent recipe.

Ingredients

  • 1 lb salmon filets (4 flilets)
  • 1 tablespoon olive oil
  • salt and pepper
  • 3 tablespoons unsalted butter
  • 1 clove garlic, minced
  • 2 tablespoons capers
  • 1 lemon, juiced and zested (about 1/4 cup juice)

Instructions

  1. Turn the oven broiler on high. Line a small baking sheet with foil and spray with cooking spray.
  2. Set the four salmon filets on the baking sheet, not touching. Brush with olive oil and sprinkle with salt and pepper. Slide into the oven and broil for 8-10 minutes, until cooked through and golden at the edges.
  3. Remove from the oven.
  4. In a small skillet, melt the butter set over medium heat. Add the garlic and capers and cook, stirring occasionally, for about 1 minute. When the garlic is fragrant, add the lemon juice, lemon zest and 1/2 teaspoon of salt. Stir vigorously for 1 minute. Remove from heat.
  5. Place a salmon filet on each of four plates. Spoon the lemon caper sauce over each filet, dividing it evenly among the four plates.
  6. Serve immediatelyly
