Ingredients

  • 1 package mini Fillo shells (15 shells)
  • 1 tablespoon finely chopped shallot
  • 1 tablespoon parmesan cheese
  • 1 large egg
  • 1 tablespoon milk
  • pinch salt and pepper

Tomato Basil Bruschetta

  • 1 small, ripe tomato (about 2 inches in diameter)
  • salt and pepper, to taste
  • 1 tablespoon finely sliced fresh basil

Instructions

  1. Heat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and lay out Fillo shells.
  2. Divide the shallots and parmesan between the shells.
  3. In a small mixing bowl, whisk together the egg, milk and pinches of salt and pepper. Divide evenly among the shells.
  4. Slide the baking sheet into the oven and bake for 10-12 minutes. Remove from the oven.
  5. In a small bowl, stir together the tomatoes, salt and pepper. Divide evenly on the egg bites and top with basil.
  6. Serve immediately.
