It never ceases to amaze me how the combination of ingredients can shift the flavor of a dish. Garlic, shallots, seasonings, spices, vegetables, potatoes and on and on. The type of cheese added. All can shift, change and nudge the flavor of a recipe in one direction or another.

Still, this iteration surprised me. Although these egg bites looked the subtlest of all that I made (see also Tomato Basil Bruschetta Egg Bites and Potato Cheddar Egg Bites), the flavor is bold and nuanced, full of freshness and flavor. Garlic and shallots together have a way of waking up the senses with their sharp but sweet tendencies. The Queso Fresco, a saltier cheese, brings a brisk dimension to the creamy egg mixture.

What I love about cooking and developing recipes is the discovery of it all. What begins as an idea, often in a small notebook as part of a list of dishes and flavors I am thinking about, becomes tangible the first time I attempt it. And then it becomes nuanced as I test and retest the recipe.

This Garlic Shallot Egg Bites recipe relies heavily on the boldness and integrity of the ingredients that comprise them. That is to say that while these don’t have many ingredients, the flavor is big and unexpected. They are super easy to make — just a few steps and a bit of baking — and they’re certain to draw wows from whomever you are enjoying them with.

These are excellent for breakfast or brunch but can also be a lovely addition to an appetizer spread. Enjoy them as you will.

Garlic Shallot Egg Bites with Queso Fresco

Ingredients

  • 1 package mini Fillo shells (15 shells)
  • 2 tablespoons finely chopped shallot
  • 1 clove garlic, minced
  • 2 tablespoons crumbled queso fresco
  • 1 large egg
  • 1 tablespoon milk
  • pinch salt and pepper

Instructions

  1. Heat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and lay out Fillo shells.
  2. Divide the shallots and garlic evenly between the shells.
  3. In a small mixing bowl, whisk together the egg, milk and pinches of salt and pepper. Divide evenly among the shells.
  4. Slide the baking sheet into the oven and bake for 10-12 minutes or until the shell edges are golden.
