One of the things no one told me before my son left for college last fall was how jarring it would be to basic things. Suddenly, I didn’t know how to grocery shop or cook for two. I was baffled by meal planning. All the recipes and dishes we typically ate suddenly seemed too much for just my 16-year-old daughter and me.

It really was a huge adjustment.

Fortunately, eventually we settled in with new routines and new dinner plans. I even started developing more recipes for two because that’s what I needed. Sarah’s Cucina Bella has long been a chronicle of my own food journey, so it was pretty natural to shift in that way — even just a little bit.

This Slow Cooker Short Ribs for Two recipe is among the new dishes I worked on over the last several months. It’s rich and robust — perfect for serving over creamy garlic mashed potatoes and with garlicky sauteed spinach. It’s also easy. If I can set aside about 15 minutes in the morning, then I have time to make this for the evening.

This is the kind of recipe we needed last fall but didn’t yet have. It’s perfect for the long and busy days that come with being a pretty involved family. And it’s hearty, filling and nourishing, which is all good too.

Slow Cooker Short Ribs for Two

Rich and robust, these slow cooker short ribs for two are delightful served with mashed potatoes and garlicky spinach.

Ingredients

  • 1 lb boneless beef short ribs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 large vidalia onion (sweet onion), halved and thinly sliced
  • 2 cloves garlic, crushed
  • 1 cup red wine
  • 1/2 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika

Instructions

  1. Heat a large skillet over high heat until hot. Season the short ribs with salt and pepper all over and then add to the pan. Sear for one minute per side. Remove from the pan.
  2. Arrange the onions and garlic in the bottom of a slow cooker. Top with the seared short ribs.
  3. In a mixing bowl, stir together the red wine, beef broth, Worcestershire sauce, dried rosemary and paprika. Pour over the short ribs into the slow cooker.
  4. Set the slow cooker to low and cook for 8 hours.
