Growing up in New York, my friends and I would sometimes order disco fries — fries topped with gravy and gooey cheese — or chili cheese fries to share when we went out. When we moved to Maine a decade ago, we were introduced to the very similar concept of poutine, which tops fries with gravy and cheese curds.
These days, there’s so many options for fries topped with things available. One local restaurant tops fries with bits of fried chicken, a maple glaze and cheese. Another serves up plates of fries with bacon, garlic, seasonings and more. And there’s even a chain restaurant selling tater tots loaded with beef brisket, cheese sauce, jalapeños, scallions and more.
Fries with toppings have really become a thing in recent years, huh?
That got me thinking about the humble French fry and how trends like this can be made at home when the desire strikes. Honestly, I was really thinking about poutine at the time. But ultimately, I decided to create a recipe that uses a few ingredients we usually have on hand.
This recipe was inspired by Greek fries topped with oregano and feta that Will, my sister and I had last year at a Washington D.C. restaurant called Souvlaki.
For my version, I went more Mediterranean. Brightly flavored fresh basil accompanies the zesty garlic and scallions and salty feta cheese. I also selected waffle fries for these, since they do a fabulous job of really holding onto the toppings. And it’s perfect.

Garlic Feta Fries
Transform ordinary fries into something extraordinary with this easy recipe for Garlic Feta Fries. They'll be ready in no time!
Ingredients
- 12 oz. frozen waffle fries (4 servings -- about 40 fries)
- 2 tablespoon olive oil
- 2 cloves garlic, minced
- 2 scallions, thinly sliced with white and greens separated
- 1/2 teaspoon kosher salt
- 1/2 cup crumbled feta cheese
- 2 tablespoons finely sliced fresh basil
Instructions
- Cook the frozen waffle fries according to package directions until crisp on the outside and soft on the inside.
- In a small skillet, heat the olive oil over medium heat until warm. Add the garlic and white parts of the scallions. Cook, stirring occasionally, until softened — about 2 minutes.
- Arrange the fries on a serving plate. Top with the the garlic mixture (including the oil), drizzling it all over. Sprinkle with kosher salt and then with the scallion greens and feta cheese, spreading the toppings evenly all over. Scatter the basil slices on top.
- Serve immediately.
