Iced Apple Oatmeal Cookies

When my kids were very young, we picked all the fruit available during every season. Strawberries in early summer. Blueberries in July. Black raspberries from the yard in August. And, of course, apples in September and October.

Some years, we would pick apples several times, delighting in the fresh, crisp fruit.

But when we moved to Maine, that was one tradition that didn’t move with us. Instead, we did other things. Soccer in the autumn, skiing, ice skating and basketball in the winter, hiking in the summer. And swimming whenever we could — between lessons and Maine lakes, it could be accomplished at any time of year.

It wasn’t just that where we lived changed, so did our time. When I became a single mom, Sundays became time with their father. I also began working full time outside of the house. So our time was crunched just enough that something had to give.

But that’s okay. There are so many other wonderful things we were able to do in all the seasons. And fresh apples can be had even if you don’t have time to go pick them yourselves. The farmers market is one great source of them.

Iced Apple Oatmeal Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 apples, cored and shredded
  • 2 cup all purpose flour
  • 2 cup rolled oats
  • 2 tsp baking soda
  • 1 tsp kosher salt
  • ½ cup hot water

Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • ¼ tsp ground cinnamon

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add the butter and sugars and cream together until smooth. Add the apples and mix well to combine.
  3. In a large bowl, sift together the flour, oats, baking soda and salt. With the stand mixer running on its lowest speed, add the flour mixture a little at a time until fully incorporated.
  4. Add the hot water to the stand mixer and mix on low until smooth.
  5. Use a medium cookie scoop, or two tablespoons, to drop the cookie dough in mounds on a parchment-lined baking sheet.
  6. Bake for 8-10 minutes until golden.
  7. Transfer cookies to a cooling rack and let cool completely.
  8. To make the glaze: Stir together the glaze ingredients. Drizzle on completely cooled cookies and let sit for at least 30 minutes to set. For easy cleanup, set the cooling rack on top of a parchment-lined baking sheet before glazing.
