When my kids were in middle school, quick breads were a big thing. Between the ones sold in the school cafeteria and the ones their parents were making, I felt like I was constantly hearing about one great bread or another. And that brings me to this great bread: Blueberry Banana Quick Bread.

This bread does a couple of novel things. First, it uses up errant bananas in a delicious way. Don’t we all end up with a few ignored bananas from time to time? This is what to do with them. Second, and importantly, it uses only one egg. Some quick bread recipes call for several eggs, but this one is designed to be light on the eggs — a good thing when egg prices are so high. Thank the bananas for that.

Blueberry Banana Quick Bread is excellent sliced and eaten. But if you like it hot, toast a slice and slather it with butter. Either way, it’s divine.

Making this is simple. It’s a one-bowl technique that comes together quickly. Then the bread merely has to bake. It takes about an hour and 15 minutes. Once out of the oven, you’ll want to cool it completely before slicing.

Speaking of slicing, you might have noticed that the bread has a slice taken from the middle. I wish I could say this with my effort to get the perfect photo, but I’d be lying. No, my daughter got to the cooled bread before I could take photos for this post and decided she wanted to start with the best piece — the center.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1 large egg
  • 3 medium bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup blueberries

Instructions

  1. Heat oven to 350 degrees Fahrenheit. Grease the inside of an 8.5-inch loaf pan with butter or cooking oil spray. Set aside.
  2. In a large mixing bowl, whisk together the melted butter and light brown sugar until well combined. Add the egg, milk and vanilla extract and whisk until fully incorporated. Add the flour, baking powder and salt to the bowl and fold in with a rubber spatula. Stir in the blueberries.
  3. Pour the batter into the prepared pan. Slide into the oven and bake for 1 hour to 1 hour and 15 minutes, or until cooked through. A knife inserted in the center should come out clean.
  4. Cool completely before slicing and serving.
