Oh, the meaty splendor of cooked mushrooms. It’s just divine. And seasoned with delicate herbs and just the right amount of salt and pepper, it makes such a treat to have with your favorite steak or chicken breast.

We make mushrooms many ways in my house — sauteed in butter and oil, cooked with broccoli and cooked as part of divine pastas, for instance. Sometimes my daughter sautees them just to put them in her fancy ramen noodles.

This recipe for Herbed Roasted Mushrooms is a favorite because it’s so easy and creates mushrooms perfect for serving with a heavier dish. They’re meaty, flavorful and ready to be enjoyed.

If you really, really love mushrooms (or are serving a crowd), double or triple this recipe.

Making this recipe for Herbed Roasted Mushrooms is remarkably simple. Start with the mushrooms. You’ll want a small, round variety like cremini mushrooms or button mushrooms.

Use a damp paper towel to clean the mushrooms off. You want to wipe the dirt and debris away as best you can.

Whatever you do, don’t rinse them in running water. The mushrooms will soak it up and the resulting cooked mushroom won’t be as good.

Cleaned mushrooms sit on a baking sheet.

Once you have clean mushrooms, place them on your baking sheet. Make sure they have space. As they cook, the mushrooms will release their juices.

Then drizzle the mushrooms with olive oil and season them with thyme, rosemary, salt and pepper.

Finally, bake them. These take a total of about 25 minutes to achieve perfect browned status.

And then they’re ready. The flavor is rich and meaty, accented with the delicate hints of herbs. They are lovely — and so easy to make too.

I like to serve these Herbed Roasted Mushrooms as a side dish with chicken or steak. They could also be delightful with turkey. The portions this makes are small, but they are meant to be eaten along with other side dishes that are more substantial.
