One of my great regrets when it comes to the house I bought in 2021 is that it lacks a fireplace and a massive kitchen for gathering. At the time, a fireplace wasn’t terribly important to me and the kitchen — well, after years of looking for the right house, I was okay with the smaller kitchen.

Regarding the fireplace, I would love to curl up with a good book and a crackling fire in the evenings. But the kitchen, that desire runs deeper.

The kitchen in my home isn’t small per se, but it’s tight. When several people are in it, someone always feels like they are in the way. It’s not conducive to gathering or hanging out in the way my previous kitchens were. As a result, people seldom remain in the kitchen with me while I am cooking. It’s lonely.

Of course, in 2021, at the height of the pandemic, we had so much together time as a family that I wasn’t worried about gathering spaces for the future. Next time, I am going for the bigger version where everyone can gather comfortably. I love having people in the kitchen with me.

Anyway, none of this is to say I don’t like my house. I do. I just wish it had these cozy elements that encourage gathering.

If it did, this Garlic Sage White Bean Dip would be the perfect appetizer to whip up and leave on the counter for folks to munch on while I cook. It’s easy, quick and so delicious.

Sage is a lovely herb that often makes an appearance with roasts and other hearty foods. In this satisfying dip, the herby sage compliments the earthy garlic in a lovely way. It’s perfect for serving with an array of veggie crudites, as shown in these pictures. But you could also surround it with slices of a good crusty bread, crackers or even chicken skewers.

It’s also lovely as a condiment in sandwiches. Imagine the turkey sandwich you could make with this!

Don’t worry if you don’t have a gathering kitchen either. This dip is excellent for serving wherever, whenever. Enjoy it in the living room while watching your favorite show. Whip some up for taking to a friend’s house. Bring it along on picnics or just take it outside to enjoy.

Garlic Sage White Bean Dip

Sage is a lovely herb that often makes an appearance with roasts and other hearty foods. In this satisfying dip, the herby sage compliments the earthy garlic in a lovely way. Serve it with your favorite array of veggie crudites, crackers or other dippers.

Ingredients

  • 1 15.5-oz can cannellini beans, drained and rinsed
  • 1 clove garlic, peeled and crushed
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons extra virgin olive oil, plus extra for drizzling
  • 1/2 teaspoon finely minced fresh sage, plus extra for garnish
  • 1 tablespoon lemon juice

Instructions

  1. Combine the beans, garlic, salt and pepper in the bowl of a food processor. Pulse until chopped. Add the olive oil, sage and lemon juice and process until smooth.
  2. Remove the white bean mixture to a bowl. Drizzle with additional olive oil and sprinkle with minced sage.
  3. Serve with sliced veggies or crackers.
  4. Leftovers should be store in an airtight container in the fridge for up to 5 days.
