Confession: Whenever there’s avocado on a menu, I gravitate toward it. From sliced to smashed to pureed, I love the flavor avocado lends to dishes and eat it. Often.

It certainly doesn’t hurt that avocado is good for you — it’s has healthy fats and a boat load of nutrients like carotenoids. A cup of avocado has 40% of your daily recommended intake of fiber, according to World’s Healthiest Foods. It also has 35% of your daily recommended intake of Vitamin K and 30% of the daily recommended intake of folate.

Most of the time, I just eat my avocados smooshed on toast with a little salt and pepper, but this roundup has me thinking I should be a little more ambitious next time. That frittata looks amazing!
