There’s something about the act of writing down what we will be eating each night and posting it on the refrigerator that makes it more real. It’s more apt to become our reality. And I’ve found that the longer I have been doing this, the more likely I’ve been to respect our meal plan.

(Before I started working at home I used to also meal prep for lunches and I suspect I will again, whenever my office reopens.)

But sometimes I have difficulty. That was the case last weekend when I stared at the blank calendar, uncertain of what to make for any of the nights.

So, I did what made sense: I inventoried our proteins and vegetables on scrap paper and used that to drive my decisions.

I think there are way too many recipes involving meat (chicken). Meat's not healthy to eat more than 2x a week, if that.

In terms of how many times a week to eat meat, recommendations vary based on many factors — from personal health to particular eating strategies. That aside, I did double check my work on this, as I strived to provide a good mix of recipes for readers to pick and choose from in their quest to eat healthy dinners.
